I had just finished a lecture at the University of Arizona on my then-new book, Taco USA: How Mexican Food Conquered America. Over her lifetime, she has driven and managed the crafting &amp; creation of approximately 360 batches of traditional mezcal (100-400 liters per production), from all different types of wild and domesticated agave sourced with fellow villagers in Chichicapam and other pueblos.She works with and maintains relationships with hundreds of people from different villages and has received thousands of people in her home. With experience in developing environmental education programs for youth and adults, she is dedicated to fostering a deeper understanding of conservation.       <image:caption>Chris Simmons After being raised on the flatlands of South Dakota, Chris Simmons wrestled at the Division One level for Boston University before launching his career in the hospitality field. After a dozen years in the Northeast, he moved his young family to San Diego where his son was born. It was in America’s Finest City, just a stone’s throw away from the Mexican border, where his passion for Tequila and other agave spirits began to take shape.  Through years of bartending and making his way through the ranks of restaurant and hotel management and operations, Simmons focused on building world class bar programs and profitable restaurants. Taking a job at the prestigious Rancho Valencia Resort and Spa in 2012, he curated his first large scale agave program and launched the All Agave Club. Then, as the General Manager of The Patio on Goldfinch and later as the Director of Food and Beverage for celebrity Chef Brian Malarkey, Simmons created and facilitated the Agave Dinner Series. These popular and well-regarded agave and food pairing events often featured award-winning chefs from Southern California and Baja, Mexico, including the likes of Javier Plascencia, Drew Deckman, Flor Franco, and Miguel Angel Guerrero, along with Master Distillers from Mexico, including Carlos Camarena, Tomas Estes, Guillermo Sauza, Pepe Hermosillo, and others. In 2017, Simmons joined forces with business partner Alan Ezeir and founded Sipping Life, an agave-centric company focused on providing professional level tastings throughout the U.S. as well as guided tours to Mexico. Chris has earned his Level Two Master Mezcalier certification and is a Certified Catador, obtaining his title from the Mexican Academy of Tequila Tasters led by the highly respected Francisco Hajnal. He has also earned Sommelier certifications through the Court of Master Sommeliers as well as the Wine and Spirits Education Trust (WSET). He now travels the U.S. and Mexico, working as the National Agave Spirits Specialist for Samson &amp; Surrey. In this role, he represents Tequila Ocho and Mezcal Vago as each brand’s National Ambassador.</image:caption>

      <image:caption>Dan Collins Dan Collins says that his fondest childhood memories are of the desert. He grew up in Southern California, where his family would escape the smog-clouded clamor of the LA basin to vacation under the clear skies and quiet of the Mojave Desert. There he and his sister would eagerly explore the desert environment, and excitedly share their discoveries when returning to the family campsite. It was only natural that when he retired, Dan and his wife Sue would decide to return to the desert. But then, wanting to escape the maddening excess and expense of California, Tucson, Arizona would become their new home. Eager once again to explore this new environment, Dan received his initial certification as a Sonoran Desert Naturalist in 2011, and in 2018 he earned his designation as an Arizona Master Naturalist. He devotes most of his volunteer hours at Saguaro National Park - West, where he helps visitors plan their activities and presents interpretive programs on our native fauna and flora, including the agave.</image:caption>

Upon graduating, she realized what most excited her about the Bible was the passage where Jesus turns water into wine. She soon helped launch Boston’s B-Side Lounge, the first bar in the city to focus on classic cocktails and vintage spirits and continued making her mark on the city’s hospitality scene during stints at Green Street, Brick &amp; Mortar and Barbara Lynch’s award-winning Drink. In 2007, Kalkofen founded Boston’s chapter of Ladies United for the Preservation of the Endangered Cocktail, fulfilling her desire to “cocktail for a cause.” Collectively, the ladies of LUPEC raised more than $40,000 for local Boston women’s charities by throwing the best parties in town. In 2013, Misty signed on as a cultural liaison and brand representative for Del Maguey Single Village Mezcal. There, she learned the ins and outs of not only the spirit but the people, customs, and cultural considerations that go into its production. Featured in the likes of Bon Appetit, Imbibe, Wine Enthusiast, The Wall Street Journal, and The Boston Globe, to name just a few, Misty also racked up American Bartender of the Year and International Bartender of the Year nominations and an American Brand Ambassador of the Year award from Tales of the Cocktail, among other industry accolades.</image:caption>

      <image:caption>Omhar Acuna I was born in Huasabas Sonora in 1978 where I spent my entire young life. In 1995 I decided to try my luck by coming to the US leaving my hometown, parents, and brothers in search of more opportunities. When I arrived in Tucson, I stayed with my aunt until I graduated from high school. Upon my arrival, I found out I needed to not only learn what was taught at school but also, I didn’t just have to learn what was taught at school but also a new culture and a new language, a task that I enjoyed (and still do) because I fall in love with Tucson and its people. I started working as a musician that same year but at 17 Years Old I had to step outside the saloon or cantina on my breaks because I was not old enough to stay inside. After graduating from High school I started going to college taking classes in Music and construction the two things I enjoyed the most, I also got a part-time job cleaning offices after my music performances. I married my wife Aracely in 1999 and we had our first child Carlos in 2000, Darien in 2001, and Xitlaly in 2004. I started an HVAC company in 2009 and started working with Bacanora back in 2012, importing the second Bacanora in the states. That project was a test flight to import and distribute liquor spirits, a company that stayed as a project until 2021 when we made the decision to make it into a business with the involvement of our children (adults by now) We import Bacanora Los Cantiles 1905 in partnership with the Portillo Family in Mexico and our family represents the brand in the states as part of a perpetual exclusive agreement.</image:caption>

At a controversial moment in agave spirits legislation, he directed the documentary Viva Mezcal with the intention of turning people’s eyes to the mezcal situation. He also founded Mezonte, an organization and tasting room that aims to preserve the traditional agave spirits culture creating partnership with 13 producers and families from across Mexico. He has given seminars, screenings, tastings and forums in Mexico and USA. He is a member of the Tequila Interchange Project (TIP) and board of the BatFriendly Project. In 2023, he published his first book, "A Field Guide to Tequila," and was selected as a National Science Foundation Graduate Research Fellow. He holds numerous certifications related to tequila and mezcal, is a permanent legal resident of Mexico, and is pursuing a Ph.D. and studying Nahuatl at the University of Utah. His doctoral dissertation research focuses on Mexico's nascent Denomination of Origin for Raicilla.</image:caption>

Since 2008, he has founded and collaborated in different projects related to the education and awareness of Mezcal. He worked with brands such as Agave de Cortés, Nuestra Soledad, and El Jolgorio. He also co-founded Mezcalogia in 2014 which contributed to the strengthening of knowledge and appreciation of Mezcal. In 2015 Asís and his family joined with the Saravia family of Durango to begin a new project that was in balance with the pristine ecosystem at Rancho El Ojo in Durango. As owner/baker of Barrio Bread, Guerra uses flour and water to build connections to make the world a better place. Guerra began his career 32 years ago in Flagstaff where he was hired as a bread-baker. He opened his first bakery there in 1995, and another in Oregon two years later. He eventually returned to Tucson and became a teacher but also was experimenting with bread baking, starting Barrio Bread in his garage in 2009. He chose the name because Barrio is Spanish for neighborhood, and the name emphasizing his commitment to his community. His naturally leavened bread is made with a French method using wild yeast, producing breads that are delicious, easy to digest and have a perfect crust. With his naturally fermented breads he promotes biodiversity and drought tolerance, and enhances the nutrition and flavor profiles of the regional food supply. When Guerra founded Barrio Bread, he had a vision to revive native and heritage varieties of grains in order to build a sustainable grain economy in Southern Arizona. Today, his bakery is a model for the future. Guerra unites regional farmers and millers in bringing healthy whole grains, flours, and breads to consumers, expanding the meaning of Tucson’s gastronomy. Guerra has won numerous awards, including the 2022 James Beard Award for Outstanding Baker and a 2022 MOCA Local Genius Award, Tucson Hispanic Business man of the Year. At HED, she worked as GM and Event Curator at its music forum Salon Hecho. It was at Hecho where Issel's agave spirit education began. In 2016, Issel became National Brand Ambassador for Artisanal Distillates (Mezcal de Leyendas, Peloton de la Muerte, and Fabriquero Sotol). These brands are all heavily focused on bringing to the forefront, the importance of the Maestros Mezcaleros/Sotoleros, and educating consumers on Mexican spirits' unique terroirs and flavor profiles. Over the years, Issel has been able to form close ties with the families who produce these spirits and, further enrich her personal relationship to her native culture. She has traveled through the US leading educational sessions that focus on the unique environments and the people who kindly share their culture with the world through distilled beverages.       <image:caption>Dr. Luke Cole Dr. Luke Cole is the director of the Santa Cruz River program at Sonoran Institute. Luke joined Sonoran Institute in 2018 and manages the ongoing projects on the Santa Cruz River, working with staff and collaborators to restore and enhance this Living River in the heart of southern Arizona and northern Sonora. Prior to joining the Sonoran Institute, Luke worked for the Washington, D.C. city government tracking the District’s green infrastructure and water quality improvement programs with a focus on coordinating tree planting programs and policy. Luke has a Ph.D. in environmental sciences from the University of Virginia, an M.S. in oceanography from the University of Rhode Island, and a B.A. in biology from St. Mary’s College of Maryland.</image:caption>

      <image:caption>Sandro Canovas SANDRO CANOVAS is an adobero and Sotol activist in the borderlands of West Texas &amp; Northern Chihuahua dedicated to the defense of the designation of Sotol that exists since 2002 for Chihuahua, Coahuila y Durango in Mexico. He also spends his time advocating and educating people about how the tradition and patrimony of Sotol is affected by the appropriation efforts and newer steps towards industrialization in Chihuahua. He is currently working on a documentary on Sotol and helps Maestros Sotoleros and their families attend festivals and to find markets for their destilado Norteño.</image:caption>

      <image:caption>César Iván Ojeda Linares Currently a Postdoc in the Botanical Garden UNAM, Mexico City. I was born in the southern and marginalized region of Mexico City in a municipality known as Xochimilco. This region is known for its traditional wetland agricultural systems, the chinampas (raised beds), which were able to feed most of the city population. The fact that I grew up there made me aware of the relevance of agricultural systems and the conservation of these systems. I studied Biology at the Metropolitan University in México city, then I got master’s studies at the Institute of Ecology UNAM and a research stay at Kyoto Sangyo University in Japan, studying developmental process on different plant species under climate change scenarios. Then I got a PhD at the Institute of Sustainability at UNAM, in Michoacán with the main goal to understand the plants that are used to produce traditional fermented beverages. Subsequently, I specialized in yeast communities related to these fermented environments. These recent years I have been collaborating with several producers of traditional fermented beverages, doing workshops with them in order to visualize the relevance of the microbial communities as a part of the agrobiodiversity that is managed and domesticated by them, “this invisible world”. As well, I have been promoting the conservation of local traditional fermented beverages not only as a significant part of biocultural heritage, but also the consumption of these beverages as a mechanism to improve human health. One of my current main interests now is assessing the challenges for climate change in the fermentation process and how producers perform activities to cope with these challenges. Finally, in the current year I am proposing a novel field in ethnosciences, ethnomicrobiology. This relevant research field is a transdisciplinary approach that allows us to rethink the human-microbes interaction, highlighting the significance of we are holobionts. Since my background has been closely related to nature and the lack of access to some resources my main goal is to look for equitable access to resources for marginalized communities. Looking for social and ecological justice through the study of traditional fermented beverages.</image:caption>

      <image:caption>Demion Clinco Proud Arizona native Demion Clinco has been serving our community in a variety of roles for decades. Demion Clinco is co-owner of Sonoran Wines, a vineyard located in the Willcox Basin in Cochise County. He also serves as VP of Catalina In-Home Services, a family owned healthcare business that has provided services in Southern Arizona for four decades. Clinco was appointed to the Arizona State House of Representatives in 2014. During his time in the State House he worked to advance economic development legislation, and advanced a state historic tax credit program. He served on the House Financial Institutions and Government committees and Joint Legislative Audit Committee. Clinco developed numerous community-based preservation initiatives, programs, and projects including working to preserve Tucson neon signs, a model program that was replicated throughout the United States. Clinco was the primary author for numerous National Register of Historic Places individual and district nominations including the Sunshine Mile, Miracle Mile, and Indian Ridge. Clinco has served on numerous foundation and nonprofit boards including the Board of Directors of Archeology Southwest and The Gregory School, and Pima Community College.</image:caption>

      <image:caption>Greg Barron-Gafford, Ph.D Greg Barron-Gafford, Ph.D., is an ecologist and Earth System Scientist who has been building the field of 'agrivoltaics', which is the colocation of agriculture and renewable energy production from photovoltaics (solar panels). Greg began this work in southern Arizona to study the benefits across the food-energy-water nexus, and over the years has developed a national and international program connecting with researchers and rural community leaders across the American Southwest, Mexico, Kenya, Tanzania, and Israel. Recently, he has secured funding from the Departments of Energy and Agriculture to explore the potential of growing agaves and other climate-smart crops within solar farms. Working to develop science-based solutions to help people adapt to the increasing pressures that come from a changing climate is a personal and professional goal.</image:caption>
