In this presentation, specific Geographical Indications representing 18 unique mezcal-producing regions within Oaxaca are proposed, with a detailed and informative map. It is shown how 6 main parameters are used to define the boundaries for the proposal and how in turn these parameters and regions will help preserve traditional mezcal, the ecological resources used in its production, and its regional organoleptic profile.
